  • 2 cups cooked chicken shredded
  • 1 cup black beans rinsed and drained
  • 1 cup corn frozen or canned (drained)
  • 1 red bell pepper diced
  • 1 avocado diced
  • 1/2 cup cherry tomatoes halved
  • 1/4 cup red onion finely chopped
  • 1/4 cup fresh cilantro chopped
  • 1/4 cup lime juice
  • 1/4 cup olive oil
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste

Method
 

  1. In a large mixing bowl, combine the shredded chicken, black beans, corn, red bell pepper, avocado, cherry tomatoes, red onion, and cilantro.
  2. In a separate small bowl, whisk together the lime juice, olive oil, cumin, chili powder, salt, and pepper until well combined.
  3. Pour the dressing over the chicken mixture and gently toss until everything is evenly coated.
  4. Taste and adjust seasoning if necessary. For added zest, you can add more lime juice or spices according to your preference.
  5. Chill the salad in the refrigerator for at least 30 minutes before serving to allow the flavors to meld.
  6. Serve chilled or at room temperature.
