- Preheat your oven to 350°F (175°C) and grease an 8x8-inch baking pan. Optionally line with parchment paper for easier removal.
 - In a microwave-safe bowl, melt the white chocolate for about 1-2 minutes until smooth. Set aside to cool slightly.
 - In a blender, combine cottage cheese, eggs, vanilla, lemon zest, lemon juice, and sweetener. Blend until smooth, about 30 to 45 seconds.
 - Add baking powder and salt to the mixture, along with cooled melted white chocolate. Blend for an additional 10-15 seconds.
 - Transfer the mixture to a bowl and fold in almond flour until fully incorporated. The batter should be thick yet smooth.
 - Pour the batter into the prepared pan and sprinkle with white chocolate chips if desired.
 - Bake for 22-25 minutes until the center is just set. A toothpick should come out with moist crumbs.
 - Allow to cool completely at room temperature, then refrigerate for at least 1 hour before slicing. Enjoy chilled or at room temperature.
