Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and grease an 8x8-inch baking pan. Optionally line with parchment paper for easier removal.
  2. In a microwave-safe bowl, melt the white chocolate for about 1-2 minutes until smooth. Set aside to cool slightly.
  3. In a blender, combine cottage cheese, eggs, vanilla, lemon zest, lemon juice, and sweetener. Blend until smooth, about 30 to 45 seconds.
  4. Add baking powder and salt to the mixture, along with cooled melted white chocolate. Blend for an additional 10-15 seconds.
  5. Transfer the mixture to a bowl and fold in almond flour until fully incorporated. The batter should be thick yet smooth.
  6. Pour the batter into the prepared pan and sprinkle with white chocolate chips if desired.
  7. Bake for 22-25 minutes until the center is just set. A toothpick should come out with moist crumbs.
  8. Allow to cool completely at room temperature, then refrigerate for at least 1 hour before slicing. Enjoy chilled or at room temperature.
