  1. Preheat the oven to 350°F (175°C) and grease an 8-inch round cake pan.
  2. In a medium bowl, whisk together 2 cups of all-purpose flour, 1 ½ teaspoons of baking powder, ½ teaspoon of baking soda, ½ teaspoon of salt, and 2 tablespoons of poppy seeds.
  3. In a large mixing bowl, beat together ½ cup of softened unsalted butter and 1 cup of granulated sugar until light and fluffy.
  4. Add 2 large eggs to the butter and sugar mixture, one at a time, mixing well after each addition.
  5. Fold in ½ cup of freshly squeezed grapefruit juice, the zest of one grapefruit, and 1 teaspoon of vanilla extract until combined.
  6. Gradually add the reserved dry mixture to the wet ingredients, folding gently until just blended.
  7. Pour the batter into the prepared cake pan, smoothing the surface evenly.
