Ingredients
  

For the Chicken Marinade

For the Rice Base
  • 1 cup Jasmine rice Basmati or brown rice can be substitutions.
  • 2 cups Chicken broth Vegetable broth can be used for a vegetarian option.
For the Avocado Mixture
  • 2 large Diced avocado Guacamole can be used as an alternative.
  • 1/4 cup Red onion Finely chopped, green onions can be a milder alternative.
  • 1/4 cup Chopped fresh cilantro Parsley can be used as a different herb.
  • 1 tablespoon Olive oil Any neutral oil can suffice.
For Serving
  • 2 wedge Lime Use lemon wedges as an alternative.

Method
 

Instructions
  1. In a mixing bowl, whisk together honey, lime juice, lime zest, minced garlic, ground cumin, salt, and pepper until uniform. Marinate chicken in the mixture for 30 minutes to 2 hours.
  2. Rinse jasmine rice under cold water until clear. Boil chicken broth in a saucepan, add rice, cover, reduce heat, and simmer for 15 minutes.
  3. Preheat grill to medium-high. Grill marinated chicken for 6-7 minutes on each side, until cooked through. Let rest and slice.
  4. In a bowl, mix diced avocado, red onion, cilantro, and olive oil until combined but not mashed.
  5. In a serving dish, layer rice, add sliced chicken, and finish with the creamy avocado mixture on top.
  6. Garnish with lime wedges and serve warm.
