  • 2 tablespoons fresh dill replace with fresh parsley or mint if dill is unavailable

Preparation
  1. In a small mixing bowl, whisk together fresh lemon juice and kosher salt until the salt is fully dissolved. Gradually drizzle in the extra-virgin olive oil while whisking vigorously to create a smooth dressing.
  2. Place the diced beets into a large mixing bowl, drizzle half of the dressing over the beets, and toss to combine. Allow marinating at room temperature for 15 minutes.
  3. Add the sliced cucumber, crumbled feta cheese, and chopped fresh dill to the bowl with the marinated beets. Pour the remaining dressing over and gently toss to combine.
  4. Before serving, give the salad a gentle stir. If watery, carefully drain excess liquid. Serve immediately.
