Ingredients
  

For the Casserole Base
  • 1 cup Quinoa Rinsed
  • 2 cups Vegetable Broth Or water
  • 2 tablespoons Olive Oil Or avocado oil
For the Veggies
  • 1 medium Onion Diced
  • 3 cloves Garlic Minced
  • 1 cup Bell Pepper Diced, red or yellow
  • 1 medium Zucchini Diced
  • 1 cup Cherry Tomatoes Halved
  • 2 cups Baby Spinach Chopped
  • 1 cup Mushrooms Sliced
For the Spice & Sauce
  • 1 teaspoon Dried Oregano
  • 1 teaspoon Dried Basil
  • 1 teaspoon Smoked Paprika Adjust to taste
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
  • 1 cup Tomato Sauce
  • 1/2 cup Greek Yogurt Or dairy-free option
  • 1 pinch Red Pepper Flakes Optional
For the Topping
  • 1 cup Shredded Mozzarella Cheese Or dairy-free option
  • 1/4 cup Grated Parmesan Cheese Optional
  • 1 tablespoon Fresh Parsley or Basil Chopped

Method
 

Cooking Steps
  1. In a medium saucepan, bring vegetable broth to a boil and stir in quinoa. Reduce heat and simmer for 12-15 minutes.
  2. Heat olive oil in a skillet over medium heat, add onion and garlic, and sauté for 2 minutes. Add remaining vegetables and cook for 5-7 minutes.
  3. In a bowl, combine tomato sauce, Greek yogurt, and red pepper flakes until smooth.
  4. Preheat oven to 190°C (375°F). Mix quinoa, sautéed vegetables, and sauce in a bowl and transfer to a greased baking dish.
  5. Top with mozzarella and Parmesan cheese, cover with foil, and bake for 20 minutes. Remove foil and bake another 10 minutes.
  6. Let casserole rest for 5 minutes, then garnish with parsley or basil before serving.
