Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C).
  2. Wash and dry the sweet potatoes thoroughly. Rub each with olive oil and place on a parchment-lined baking sheet.
  3. Bake the sweet potatoes for 45-60 minutes until tender.
  4. Allow them to cool for 5-10 minutes.
  5. Slice each potato in half lengthwise and scoop out the flesh into a mixing bowl.
  6. Mash the flesh with unsalted butter, sour cream, milk, salt, pepper, ground cinnamon, and ground nutmeg until smooth.
  7. Fold in the shredded cheddar cheese, chopped green onions, and crumbled bacon if using.
  8. Spoon the filling back into the potato skins, mounding it slightly.
  9. Return the stuffed potatoes to the oven for another 15-20 minutes.
  10. Let them cool for about 5 minutes before serving.
