Step-by-Step Instructions
  1. Preheat your oven to 180°C (350°F) and line an 8-inch square baking tin with baking paper.

  2. In a large mixing bowl, combine melted unsalted butter, desiccated coconut, caster sugar, and plain flour. Press it evenly into the lined baking tin and bake for 15 minutes.

  3. Whisk together sweetened condensed milk, fresh lemon juice, and strained passionfruit pulp. Pour this mixture over the hot base and return it to the oven for another 10 minutes.

  4. Combine the remaining passionfruit pulp and sprinkle the powdered gelatine over it. Heat gently until dissolved and mix in caster sugar and cold water.
