- Preheat your oven to 180°C (350°F) and line an 8-inch square baking tin with baking paper.

- In a large mixing bowl, combine melted unsalted butter, desiccated coconut, caster sugar, and plain flour. Press it evenly into the lined baking tin and bake for 15 minutes.

- Whisk together sweetened condensed milk, fresh lemon juice, and strained passionfruit pulp. Pour this mixture over the hot base and return it to the oven for another 10 minutes.

- Combine the remaining passionfruit pulp and sprinkle the powdered gelatine over it. Heat gently until dissolved and mix in caster sugar and cold water.

- Pour the gelatine mixture over the cooled filling in the baking tin. Refrigerate for at least 2 hours to solidify.

- Once set, lift the Passionfruit Slice out and slice it into squares. Serve chilled.
