- Bloom the gelatin by sprinkling it over 1/4 cup of cold water in a small bowl. Let it sit for 5 minutes.
- Heat 1/2 cup of coconut milk over medium heat until hot but not boiling. Whisk in the bloomed gelatin until fully dissolved.
- Add the remaining coconut milk, heavy cream, granulated sugar, vanilla extract, and salt to the saucepan. Whisk together until sugar dissolves.
- Peel and chunk the mango. Blend it with lime juice and sugar until smooth to make the mango puree.
- Pour the coconut mixture into serving glasses until halfway full. Refrigerate for 2 hours.
- After the coconut layer sets, spoon the mango puree over it. Create swirls for presentation.
- Return to the refrigerator for a minimum of 3 hours or overnight to fully set and develop flavors.
- Serve chilled, optionally garnishing with fresh mango, lime zest, or toasted coconut flakes.
