Step-by-Step Instructions
  1. Bloom the gelatin by sprinkling it over 1/4 cup of cold water in a small bowl. Let it sit for 5 minutes.
  2. Heat 1/2 cup of coconut milk over medium heat until hot but not boiling. Whisk in the bloomed gelatin until fully dissolved.
  3. Add the remaining coconut milk, heavy cream, granulated sugar, vanilla extract, and salt to the saucepan. Whisk together until sugar dissolves.
  4. Peel and chunk the mango. Blend it with lime juice and sugar until smooth to make the mango puree.
  5. Pour the coconut mixture into serving glasses until halfway full. Refrigerate for 2 hours.
  6. After the coconut layer sets, spoon the mango puree over it. Create swirls for presentation.
  7. Return to the refrigerator for a minimum of 3 hours or overnight to fully set and develop flavors.
  8. Serve chilled, optionally garnishing with fresh mango, lime zest, or toasted coconut flakes.
