  1. Marinate Chicken: In a large mixing bowl, combine chicken thighs with soy sauce, honey, rice vinegar, sriracha, cornstarch, and optional sesame oil. Cover tightly and refrigerate for at least 30 minutes.
  2. Prepare Sauce: Whisk together remaining soy sauce, honey, rice vinegar, sriracha, and water in a separate bowl and set aside.
  3. Cook Chicken: Heat a skillet over medium-high heat, add olive oil, then add marinated chicken pieces and cook for 5-7 minutes until browned.
  4. Sauté Vegetables: In the same skillet, add more olive oil if needed, then add sliced onion, bell peppers, garlic, and ginger. Sauté for 5-7 minutes until tender-crisp.
  5. Combine and Serve: Return chicken to skillet with vegetables, pour in the sauce, and simmer for 3-5 minutes until thickened. Serve hot over rice, garnished with green onions and sesame seeds.
