  • 1/2 cup Cotija cheese, crumbled Feta cheese can substitute
  • 1/4 cup Fresh cilantro, chopped Parsley can replace if preferred

  • 2 cups Cooked rice White or brown; quinoa or cauliflower rice as alternatives

Method
 

Step‑by‑Step Instructions
  1. Preheat the grill to medium-high heat (375°F to 400°F). Rub chicken breasts with olive oil and season generously.
  2. Grill chicken for 6-7 minutes per side until golden brown and internal temperature reaches 165°F. Let it rest for 5 minutes.
  3. Char the corn by adding it to a skillet or on the grill for about 5 minutes until slightly charred.
  4. In a bowl, mix mayonnaise, sour cream, and lime juice to make lime crema.
  5. To assemble, layer cooked rice, sliced chicken, charred corn, cotija cheese, and lime crema in serving bowls. Garnish with cilantro.
