Ingredients
  

  • 2 cups all-purpose flour
  • 2 tablespoons sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1 3/4 cups milk
  • 1/2 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 cup fresh strawberries diced
  • 1 cup heavy whipping cream
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract for whipped cream

Method
 

  1. Preheat your waffle iron according to the manufacturer's instructions.
  2. In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.
  3. In another bowl, beat the eggs and then add the milk, vegetable oil, and vanilla extract. Mix until well combined.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Gently fold in the diced strawberries.
  5. Lightly grease the waffle iron with cooking spray or a small amount of oil. Pour the recommended amount of batter onto the preheated waffle iron and cook until golden brown and crispy. Repeat with the remaining batter.
  6. While the waffles are cooking, prepare the whipped cream. In a medium bowl, beat the heavy whipping cream, powdered sugar, and vanilla extract until soft peaks form.
  7. Serve the waffles warm, topped with a generous dollop of whipped cream and additional fresh strawberries if desired.
