Ingredients
  

  • 2 large cucumbers thinly sliced
  • 1 teaspoon salt
  • 1 tablespoon sugar
  • 2 tablespoons rice vinegar
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • 1 teaspoon chili garlic sauce adjust to taste
  • 1 tablespoon sesame seeds
  • 2 green onions chopped
  • Fresh cilantro for garnish

Method
 

  1. In a large bowl, combine the sliced cucumbers and salt. Toss to coat and let sit for about 10 minutes to draw out excess moisture.
  2. After 10 minutes, drain any excess liquid from the cucumbers.
  3. In a separate small bowl, whisk together the sugar, rice vinegar, soy sauce, sesame oil, and chili garlic sauce until the sugar is dissolved.
  4. Pour the dressing over the cucumbers and toss to combine.
  5. Add the sesame seeds and chopped green onions, mixing gently.
  6. Garnish with fresh cilantro before serving.
