Method
 

Step-by-Step Instructions
  1. Cook the noodles in a large pot of boiling water for 4-6 minutes, then drain and rinse under cold water.
  2. In a skillet, heat vegetable oil over medium heat until it shimmers.
  3. Sauté minced garlic and ginger for 1-2 minutes until fragrant.
  4. Stir in red curry paste and cook for an additional 1-2 minutes.
  5. Add soy sauce and sesame oil, and simmer for 1 minute.
  6. Gradually stir in coconut milk and simmer for 2-3 minutes.
  7. Mix in vegetable broth and simmer for another 2-3 minutes.
  8. Stir in brown sugar, lime juice, and chili flakes, and dissolve the sugar.
  9. Allow the sauce to simmer another 3-5 minutes until thickened.
  10. Combine cooked noodles with the sauce and stir gently to coat.
  11. Add peanut butter and sriracha, mixing until fully incorporated.
  12. Garnish with cilantro and green onions before serving.
