Ingredients
  

  • 8 ounces penne pasta
  • 1 pound boneless skinless chicken breasts, cut into bite-sized pieces
  • 2 tablespoons Cajun seasoning
  • 2 tablespoons olive oil
  • 4 tablespoons unsalted butter
  • 3 cloves garlic minced
  • 1 cup heavy cream
  • 1/4 cup honey
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Chopped parsley for garnish

Method
 

  1. Cook the penne pasta according to package instructions until al dente. Drain and set aside.
  2. In a large bowl, toss the chicken pieces with Cajun seasoning until evenly coated.
  3. In a large skillet, heat olive oil over medium-high heat. Add the seasoned chicken and cook for about 6-8 minutes, or until fully cooked and golden brown. Remove the chicken from the skillet and set aside.
  4. In the same skillet, melt the butter over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
  5. Pour in the heavy cream and honey, stirring to combine. Bring the mixture to a simmer and let it cook for 2-3 minutes until slightly thickened.
  6. Stir in the grated Parmesan cheese until melted and smooth. Season with salt and pepper to taste.
  7. Add the cooked penne pasta and chicken back into the skillet, tossing to coat everything in the creamy sauce.
  8. Cook for an additional 2-3 minutes to heat through.
  9. Serve hot, garnished with chopped parsley.
