Method
 

Dough Preparation
  1. In a large mixing bowl, combine sourdough discard, warm water, and instant yeast. Allow to sit for about 10 minutes until bubbly.
  2. Gradually add all-purpose flour, salt, and sugar, stirring until a shaggy dough forms.
  3. Transfer the dough to a floured surface and knead for 8-10 minutes until smooth and elastic.
First Rise
  1. Place the dough in a greased bowl, cover with a damp cloth, and let rise for 1 hour or until doubled in size.
Garlic Butter Preparation
  1. Melt unsalted butter in a saucepan over low heat. Stir in minced garlic and chopped parsley, sautéing for 2-3 minutes until fragrant.
Shape the Dough
  1. After rising, punch down the dough to release air bubbles. Roll it out into a rectangle and brush with garlic butter.
  2. Sprinkle with mozzarella and any additional cheese, then cut into squares and stack in a greased baking dish.
Second Rise
  1. Cover the stacked dough and allow to rise for 30 minutes.
Baking
  1. Preheat the oven to 350°F. Bake for 30-35 minutes until golden brown and hollow when tapped.
  2. Allow to cool slightly before enjoying.
