In a large bowl, combine the flour and salt. Gradually add water and mix until a dough forms.
Knead the dough on a floured surface for about 5 minutes until smooth. Cover with a damp cloth and let it rest for 30 minutes.
In a separate bowl, mix the ground pork, soy sauce, sesame oil, garlic, ginger, green onions, cabbage, rice vinegar, and sriracha (if using) until well combined.
Divide the dough into 8 equal pieces and roll each piece into a ball. Flatten each ball into a circle about 4 inches in diameter.
Place a generous tablespoon of the filling in the center of each circle. Fold the dough over the filling and pinch to seal, forming a half-moon shape.
Heat a skillet over medium heat and add a tablespoon of vegetable oil. Place the dumplings in the skillet and cook for 2-3 minutes until the bottoms are golden brown.
Add 1/4 cup of water to the skillet and cover immediately. Steam the dumplings for about 5 minutes until cooked through.
Remove the lid and cook for an additional 2 minutes to crisp the bottoms.
Serve the dumpling tacos hot with your favorite dipping sauce.
