  • 1 medium Red Bell Pepper Substitute with green bell pepper if desired.
For the Sauce
  • 4 cups Low Sodium Beef Broth Chicken broth can also be used.
  • 28 ounces Crushed Tomatoes Fresh diced tomatoes can also be used.
  • 1 teaspoon Caraway Seeds Can omit or replace with cumin.
  • 2 tablespoons All-Purpose Flour or Gluten-Free Flour Ensure the gluten-free flour is certified.
For Extra Touches
  • 1 tablespoon Brown Sugar Optional, adjust to taste.
  • 1 leaf Bay Leaf Remove before serving.
  • 1 cup Sour Cream Optional for serving, can substitute with Greek yogurt.

Step-by-Step Instructions
  1. Prepare the Beef: Cut the beef chuck roast into 1 ½-inch pieces and season with sweet Hungarian paprika, onion powder, garlic powder, and kosher salt.
  2. Mix the Base: In the slow cooker, combine sweet onion, smashed garlic cloves, and flour, stirring until cohesive.
  3. Layer the Ingredients: Place the seasoned beef over the onion-garlic-flour mixture, add red bell pepper, beef broth, crushed tomatoes, caraway seeds, brown sugar, and bay leaf, then stir gently.
  4. Start Cooking: Cover and cook on low for 8 hours or high for 4 hours.
  5. Thicken the Sauce: Mix a tablespoon of flour with water and stir into goulash for thicker consistency about 30 minutes before cooking ends.
  6. Final Touches: Remove bay leaf, taste and adjust seasoning, serve hot with additional caraway seeds and sour cream or Greek yogurt.
