Step-by-Step Instructions
  1. Sear the Beef: Heat a drizzle of olive oil in a skillet over medium-high heat. Season beef with salt and pepper, add to skillet, and sear for 2-3 minutes until browned.
  2. Sauté the Garlic: In the same skillet, reduce heat to medium, add 2 tablespoons of unsalted butter, and once melted, add minced garlic; sauté for 1 minute.
  3. Combine the Flavors: Pour in beef broth and Worcestershire sauce while scraping up browned bits from the bottom. Add thyme and rosemary, simmer for a minute.
  4. Assemble in the Slow Cooker: Pour mixture over seared beef in the slow cooker. Add halved baby potatoes, gently toss, and place remaining butter on top.
  5. Slow Cook: Cover and set on low for 6-7 hours or high for 3-4 hours.
  6. Serve and Garnish: Adjust seasoning if needed, garnish with freshly chopped parsley, and serve warm.
