Ingredients
  

  • 2 lbs beef chuck roast trimmed and cubed
  • 1/4 cup all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup vegetable oil
  • 1 medium onion chopped
  • 3 cloves garlic minced
  • 4 cups beef broth
  • 2 tablespoons Worcestershire sauce
  • 2 cups egg noodles
  • 1 cup frozen peas
  • 1/2 cup sour cream
  • Fresh parsley chopped (for garnish)

Method
 

  1. In a large bowl, combine the cubed beef, flour, salt, and black pepper. Toss until the beef is evenly coated.
  2. Heat the vegetable oil in a large skillet over medium-high heat. Add the beef in batches and brown on all sides. Transfer the browned beef to the slow cooker.
  3. In the same skillet, add the chopped onion and minced garlic. Sauté for about 3-4 minutes until the onion is translucent. Add to the slow cooker.
  4. Pour the beef broth and Worcestershire sauce over the beef and onions in the slow cooker. Stir to combine.
  5. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the beef is tender.
  6. About 30 minutes before serving, stir in the egg noodles and frozen peas. Cover and continue cooking until the noodles are tender.
  7. Once cooked, stir in the sour cream until well combined. Adjust seasoning with salt and pepper if needed.
  8. Serve hot, garnished with fresh parsley.

Notes
