Step-by-Step Instructions
- Preheat your oven to 350°F (175°C).
- In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the chopped red onion and red bell pepper, cooking for about 5 minutes until softened. Stir in 3 minced garlic cloves and continue cooking for another 1-2 minutes.
- In a mixing bowl, combine 1 pound of ground beef, 1 cup of Italian style breadcrumbs, ½ cup of grated Parmesan cheese, and 2 beaten eggs. Add the sautéed vegetables with 2 tablespoons of tomato paste, salt, black pepper, and a handful of chopped fresh parsley. Mix thoroughly.
- On parchment paper, spread the meat mixture into a rectangle. Layer 4 slices of deli ham, fresh basil leaves, and 1 cup of shredded mozzarella cheese. Roll the mixture tightly.
- Pinch the ends to seal and place it seam-side down on a parchment-lined baking sheet. Bake for 1 hour, or until golden brown and cooked through.
- Remove from the oven and let it rest for 10 minutes before slicing and serving over marinara sauce with pasta or zucchini noodles.

Notes
Adjust cook time for leaner meats and ensure a tight roll to maintain layers. Refrigerate assembled meatloaf if making ahead of time.
