Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the chopped red onion and red bell pepper, cooking for about 5 minutes until softened. Stir in 3 minced garlic cloves and continue cooking for another 1-2 minutes.
  3. In a mixing bowl, combine 1 pound of ground beef, 1 cup of Italian style breadcrumbs, ½ cup of grated Parmesan cheese, and 2 beaten eggs. Add the sautéed vegetables with 2 tablespoons of tomato paste, salt, black pepper, and a handful of chopped fresh parsley. Mix thoroughly.
  4. On parchment paper, spread the meat mixture into a rectangle. Layer 4 slices of deli ham, fresh basil leaves, and 1 cup of shredded mozzarella cheese. Roll the mixture tightly.
  5. Pinch the ends to seal and place it seam-side down on a parchment-lined baking sheet. Bake for 1 hour, or until golden brown and cooked through.
  6. Remove from the oven and let it rest for 10 minutes before slicing and serving over marinara sauce with pasta or zucchini noodles.
