For the Casserole
  • 1 lb Ground Beef Or turkey, for a lighter option.
  • 1 cup Chopped Onion For added flavor.
  • 1 cup Chopped Bell Peppers Any color.
  • 2 cups Frozen Corn
  • 1 can Black Beans Rinsed and drained.
  • 1 can Diced Tomatoes With green chilies, if desired.
  • 1 cup Shredded Cheese Cheddar or Mexican blend.
  • 1 packet Taco Seasoning To taste.

Instructions
  1. In a skillet, brown the ground beef over medium heat. Drain excess fat.
  2. Add the chopped onions and bell peppers to the skillet and sauté until softened.
  3. Transfer the beef and vegetable mixture to the slow cooker.
  4. Add the frozen corn, black beans, diced tomatoes, half of the cheese, and taco seasoning.
  5. Mix all ingredients well and cook on low for 4-6 hours or high for 2-3 hours.
  6. Before serving, sprinkle remaining cheese on top and allow it to melt.
  7. Serve warm and enjoy!
