- In a skillet, brown the ground beef over medium heat. Drain excess fat.
- Add the chopped onions and bell peppers to the skillet and sauté until softened.
- Transfer the beef and vegetable mixture to the slow cooker.
- Add the frozen corn, black beans, diced tomatoes, half of the cheese, and taco seasoning.
- Mix all ingredients well and cook on low for 4-6 hours or high for 2-3 hours.
- Before serving, sprinkle remaining cheese on top and allow it to melt.
- Serve warm and enjoy!
