- Boil water and cook loMein noodles according to package instructions (4-5 minutes). Drain and rinse under cold water.
- In a large skillet over medium-high heat, add peanut oil. Add ground pork and green onions; cook for 5-6 minutes until browned.
- In a medium bowl, whisk together chicken broth, mirin, dark soy sauce, minced garlic, grated ginger, sesame oil, and sriracha for the sauce.
- Lower the heat, add noodles and coleslaw to the skillet, pour the sauce over, and toss to coat everything well for 2-3 minutes.
- Serve immediately, garnishing with remaining sliced green onions.
