  • 1 lb Ground Sausage pork, chicken, or turkey
  • 2 Onions yellow or sweet
  • 2 tbsp Olive Oil for sautéing the onions
  • 1 tbsp Fresh Thyme or less if using dried
  • to taste Salt
  • to taste Pepper
For the Pastry
  • 1 sheet Puff Pastry thawed
  • 1 Egg (Beaten) for egg wash
Optional Ingredients
  • 1/2 cup Gruyère Cheese or cheddar or mozzarella
  • 1 tbsp Dijon Mustard for added flavor

Method
 

Preparation Steps
  1. Heat olive oil in a large skillet over medium heat. Add sliced onions and salt, cooking for 15-20 minutes until caramelized.
  2. In a mixing bowl, combine ground sausage, caramelized onions, thyme, salt, and pepper. Mix well and add cheese and mustard if desired.
  3. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  4. Roll out puff pastry, cut into rectangles, and fill each with sausage mixture. Fold, seal, and crimp edges.
  5. Brush tops with egg wash for a golden finish.
  6. Bake for 20-25 minutes until golden brown and flaky. Let cool slightly before serving.
