- Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Assemble the roll ups by placing two slices of provolone cheese on one half of the tortilla, followed by deli roast beef and French fried onions. Brush the edge with olive oil.
- Roll the tortilla tightly from the filled side towards the oiled edge and place seam-side down on the baking sheet.
- Brush the tops with olive oil and bake for 8 to 10 minutes until golden brown and cheese bubbles.
- Prepare the au jus by combining beef consommé, water, Worcestershire sauce, soy sauce, onion powder, and garlic powder in a saucepan over medium heat. Simmer for 5 minutes.
- Let the roll ups rest for a couple of minutes, slice into halves or thirds, and serve warm with au jus for dipping.
