- Preheat your oven to 400°F (200°C).
- Slice the French baguette into about 1/2 inch thick pieces and arrange them on a baking sheet.
- Melt the butter and coat both sides of each baguette slice with it.
- Toast the baguette slices in the oven for 6-8 minutes, flipping halfway through.
- Season the beef tenderloin medallions with salt and pepper.
- Add olive oil to a heated skillet and sear the beef for 2-3 minutes on each side.
- Let the seared beef rest for 5 minutes.
- Combine Gorgonzola cheese, cream cheese, and chopped chives in a bowl.
- Assemble by placing the rested beef on each toasted baguette slice, followed by the cheese mixture.
- Drizzle balsamic glaze over the crostini and garnish with fresh thyme.
