  • 1 pound Gnocchi Can use gluten-free varieties
  • 2 cups Pumpkin Or butternut squash/sweet potato
For the Creamy Mixture
  • 1 cup Cream Use heavy cream or oat cream for vegan
  • 1 cup Cheese Swap with plant-based cheese for vegan
For the Seasoning
  • 1 tablespoon Sage Fresh or dried
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
For the Crunchy Topping
  • 1 cup Pecans Can replace with walnuts or omit
  • 2 tablespoons Olive Oil Avocado oil can be used

Method
 

Preparation Steps
  1. Preheat your oven to 400°F (204°C). Cut pumpkin into slices and roast for 15-20 minutes until soft.
  2. In a mixing bowl, combine cooked pumpkin with gnocchi, cream, cheese, sage, and olive oil. Season with salt and pepper.
  3. Preheat air fryer to 380°F (193°C). Place the mixture in a baking dish and cook for 20-25 minutes until golden.
  4. Chop pecans and sprinkle on top once dish is done. Let rest for a couple of minutes before serving.
