Preparation Steps
- Cook the pork sausage in a large skillet over medium-high heat for about 5-7 minutes until fully cooked.
- Stir in the diced green chiles and Potatoes O'Brien and heat through for another 3 minutes.
- Lightly grease a 9"x13" casserole dish. Spoon about ⅔ cup of the sausage mixture into each tortilla and sprinkle with 2 tablespoons of cheese.
- Roll the tortillas tightly and place seam-side down in the casserole dish.
- Whisk together eggs, green enchilada sauce, milk, salt, and black pepper in a large mixing bowl.
- Pour the egg mixture evenly over the rolled tortillas.
- Cover with plastic wrap and refrigerate for 8 hours or overnight if making ahead.
- Preheat oven to 350°F. Remove cover and bake for 35 minutes, then uncover and bake for an additional 10 minutes.
- Let cool for 5 minutes before serving, garnished with toppings of your choice.
