For the Tortillas
  • 8 pieces Flour Tortillas Corn tortillas can be used for a gluten-free option.
For the Casserole
  • 2 cups Mexican 3 Cheese Blend Other melting cheeses such as Monterrey Jack can be used.
  • 8 large Eggs No substitutes recommended for this ingredient.
  • 10 oz Green Enchilada Sauce Homemade enchilada sauce can enhance flavor.
  • 2 tbsp Milk Use almond milk for a dairy-free version.
  • 0.5 tsp Salt
  • 0.25 tsp Black Pepper

Method
 

Preparation Steps
  1. Cook the pork sausage in a large skillet over medium-high heat for about 5-7 minutes until fully cooked.
  2. Stir in the diced green chiles and Potatoes O'Brien and heat through for another 3 minutes.
  3. Lightly grease a 9"x13" casserole dish. Spoon about ⅔ cup of the sausage mixture into each tortilla and sprinkle with 2 tablespoons of cheese.
  4. Roll the tortillas tightly and place seam-side down in the casserole dish.
  5. Whisk together eggs, green enchilada sauce, milk, salt, and black pepper in a large mixing bowl.
  6. Pour the egg mixture evenly over the rolled tortillas.
  7. Cover with plastic wrap and refrigerate for 8 hours or overnight if making ahead.
  8. Preheat oven to 350°F. Remove cover and bake for 35 minutes, then uncover and bake for an additional 10 minutes.
  9. Let cool for 5 minutes before serving, garnished with toppings of your choice.
