  1. Begin by heating a large non-stick skillet over medium heat for about 2-3 minutes.
  2. Spread 1 tablespoon of unsalted butter on one side of each sourdough bread slice.
  3. Place one slice of buttered bread, butter-side down, into the skillet.
  4. Spread a thin layer of Dijon mustard on the unbuttered side; add roast beef and top with two slices of cheddar cheese.
  5. Place another slice of buttered bread on top, butter-side up, and press down gently.
  6. Grill the sandwich for about 3-5 minutes until the bread is golden brown.
  7. Flip the sandwich and cook the other side for another 3-5 minutes until crispy.
