Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and grease a 3-quart casserole dish with nonstick spray.
  2. In a large skillet over medium heat, add oil and cook the diced chicken breast for 5-7 minutes until no longer pink.
  3. Prepare the instant white rice according to package instructions and transfer to a large mixing bowl.
  4. Add the queso, half and half, chopped green chiles, and minced onion to the rice. Stir to combine.
  5. Pour the rice mixture into the greased casserole dish, layer the cooked chicken on top, and sprinkle with cheese.
  6. Bake in the preheated oven for 20-25 minutes until the cheese is melted and bubbly.
  7. Let the casserole cool for a few minutes and garnish with chopped cilantro before serving.
