Method
 

Step‑by‑Step Instructions
  1. In a 12-inch skillet, heat the olive oil over medium-high heat for about 2 minutes until fragrant.
  2. Add the smoked or Italian sausage and cook for 4 to 5 minutes until browned. Remove and set aside.
  3. In the same skillet, reduce heat to medium and add minced garlic. Sauté for about 30 seconds until fragrant.
  4. Incorporate the drained white beans, chicken stock, kosher salt, and black pepper. Bring to a simmer.
  5. Lightly mash some of the remaining beans and stir into the skillet. Simmer for 5 minutes.
  6. Add the curly kale and cook for about 2 minutes until wilted.
  7. Stir in the Parmesan cheese and lemon juice, mixing until the cheese melts.
  8. Return the sausage to the skillet, and toss everything together. Adjust seasoning and serve warm.
