- Season fresh salmon fillets with salt and pepper. Heat a non-stick skillet over medium heat and add butter. Cook salmon for 4-5 minutes per side until golden brown.
- In the same skillet, melt another tablespoon of butter. Add minced garlic and sauté for about 1 minute until fragrant.
- Reduce heat to medium-low and pour in heavy cream, stirring gently. Add Parmesan cheese and mix until melted. Add spinach and cook until wilted, about 2-3 minutes.
- Squeeze fresh lemon juice into the sauce, season to taste and stir well.
- Serve salmon fillets on plates and spoon the cream sauce over the top. Optionally, sprinkle fresh herbs or extra Parmesan.
