  • 2 fillets Fresh Salmon Wild-caught is best, but farmed salmon will work too.
  • 1 tablespoon Unsalted Butter
For the Cream Sauce
  • 1 cup Heavy Cream Use half-and-half for a lighter version.
  • 2 cloves Garlic Fresh, minced.
  • 1/2 cup Parmesan Cheese Pecorino Romano can be a tasty alternative.
  • 1 tablespoon Lemon Juice
For the Greens
  • 2 cups Fresh Spinach Kale can offer a different texture.

Method
 

Cooking Instructions
  1. Season fresh salmon fillets with salt and pepper. Heat a non-stick skillet over medium heat and add butter. Cook salmon for 4-5 minutes per side until golden brown.
  2. In the same skillet, melt another tablespoon of butter. Add minced garlic and sauté for about 1 minute until fragrant.
  3. Reduce heat to medium-low and pour in heavy cream, stirring gently. Add Parmesan cheese and mix until melted. Add spinach and cook until wilted, about 2-3 minutes.
  4. Squeeze fresh lemon juice into the sauce, season to taste and stir well.
  5. Serve salmon fillets on plates and spoon the cream sauce over the top. Optionally, sprinkle fresh herbs or extra Parmesan.
