Sausage, Egg, and Cheese Breakfast Roll-Ups are a delicious and easy breakfast option that combines savory sausage, fluffy eggs, and melted cheese wrapped in a warm tortilla.

Ingredients
  

  • 1 pound breakfast sausage
  • 6 large eggs
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 large flour tortillas
  • Cooking spray or oil for greasing

Method
 

  1. In a large skillet over medium heat, cook the breakfast sausage until browned and fully cooked, breaking it apart with a spatula as it cooks. Drain any excess grease and set aside.
  2. In a mixing bowl, whisk together the eggs, milk, salt, and black pepper until well combined.
  3. Pour the egg mixture into the same skillet over medium heat. Cook, stirring gently, until the eggs are just set but still slightly soft, about 3-4 minutes. Remove from heat and stir in the cooked sausage and shredded cheddar cheese until the cheese is melted.
  4. Lay out the flour tortillas on a clean surface. Divide the egg and sausage mixture evenly among the tortillas, placing it in the center of each.
  5. Roll each tortilla tightly, folding in the sides as you go to secure the filling.
  6. In the same skillet, lightly grease with cooking spray or oil over medium heat. Place the roll-ups seam side down in the skillet and cook for 2-3 minutes on each side until golden brown and crispy.
  7. Remove from the skillet and let cool slightly before slicing in half. Serve warm.
