- Combine the base ingredients in a medium saucepan: 1 cup of water, ½ cup of golden monk fruit or allulose, ½ cup of canned pumpkin puree, 2 teaspoons of pumpkin pie spice, and a pinch of salt. Stir gently.
 - Place the saucepan over medium heat and cook the mixture, stirring continuously for about 5-7 minutes until sweetener dissolves.
 - Scrape down the sides and bottom of the pan to ensure smooth consistency.
 - Once the base is smooth, stir in the remaining 1 teaspoon of pumpkin pie spice and simmer for another 1-2 minutes.
 - If desired, whisk in xanthan gum gradually to avoid clumps.
 - Reduce heat to low and simmer for 10-15 minutes until thickened.
 - Remove from heat and stir in 1 teaspoon of vanilla extract.
 - Transfer to an airtight container using a funnel and seal tightly for storage.
