- Preheat your oven to 350°F (175°C) and prepare a 9x13-inch baking dish lined with parchment paper.
- In a stand mixer, cream together the unsalted butter, creamy peanut butter, and sugar on medium speed until light and fluffy.
- Incorporate the eggs one at a time, then add the pure vanilla extract, mixing until smooth.
- In a separate bowl, whisk the all-purpose flour and baking powder, then gradually add to the wet mixture until just combined.
- Press about two-thirds of the dough evenly into the bottom of the prepared baking dish.
- Spread the strawberry jam over the dough layer evenly.
- Crumble the remaining dough over the jam layer.
- Bake for 30-35 minutes until golden and springy to touch.
- Cool completely in the pan before lifting out and slicing into squares.
