Ingredients
  

  • 3 cups watermelon cubed
  • 2 cups peaches sliced
  • 1 cup cucumber diced
  • 1/4 cup red onion thinly sliced
  • 1/4 cup fresh mint leaves chopped
  • 1/4 cup feta cheese crumbled
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • Salt and pepper to taste

Method
 

  1. In a large bowl, combine the cubed watermelon, sliced peaches, diced cucumber, and thinly sliced red onion.
  2. Gently toss the ingredients together to mix them evenly.
  3. In a small bowl, whisk together the olive oil, balsamic vinegar, salt, and pepper.
  4. Drizzle the dressing over the salad and toss gently to coat all the ingredients.
  5. Add the chopped mint leaves and crumbled feta cheese on top.
  6. Serve immediately or chill in the refrigerator for about 30 minutes for enhanced flavors.
