Ingredients

  • 1 pound ground beef 80/20
  • 1 medium head of cauliflower chopped into small florets
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 1 teaspoon smoked paprika
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 cup shredded cheddar cheese
  • 2 green onions sliced (for garnish)

Method

  1. Heat olive oil in a large skillet over medium heat. Add the diced onion and cook until softened, about 3-4 minutes.
  2. Stir in the minced garlic and cook for an additional minute until fragrant.
  3. Add the ground beef to the skillet, breaking it apart with a spatula. Cook until browned and cooked through, about 5-7 minutes. Drain excess fat if necessary.
  4. Stir in the chopped cauliflower, smoked paprika, Italian seasoning, salt, and pepper. Cover the skillet and cook for about 10-12 minutes, stirring occasionally, until the cauliflower is tender.
  5. Once the cauliflower is cooked, sprinkle the shredded cheddar cheese over the top. Cover the skillet again and let it sit for about 2-3 minutes, or until the cheese is melted.
  6. Remove from heat and garnish with sliced green onions before serving.
