Heat olive oil in a large skillet over medium heat. Add the diced onion and cook until softened, about 3-4 minutes.
Stir in the minced garlic and cook for an additional minute until fragrant.
Add the ground beef to the skillet, breaking it apart with a spatula. Cook until browned and cooked through, about 5-7 minutes. Drain excess fat if necessary.
Stir in the chopped cauliflower, smoked paprika, Italian seasoning, salt, and pepper. Cover the skillet and cook for about 10-12 minutes, stirring occasionally, until the cauliflower is tender.
Once the cauliflower is cooked, sprinkle the shredded cheddar cheese over the top. Cover the skillet again and let it sit for about 2-3 minutes, or until the cheese is melted.
Remove from heat and garnish with sliced green onions before serving.
