  3. In a separate bowl, whisk together non-dairy milk, mild vegetable oil, light molasses, apple cider vinegar, and vanilla extract until smooth and fully combined, taking around 2-3 minutes.
  4. Pour the wet mixture into the bowl with the dry ingredients. Gently fold together with a spatula, mixing until just combined. A few lumps are okay.
  5. Lightly grease the preheated waffle iron with a small amount of oil or cooking spray to prevent sticking.
  6. Pour about one-fourth of the batter onto the center of the heated waffle iron. Spread slightly if needed, being careful not to overfill.
  7. Close the waffle iron and cook for 3-5 minutes until the waffles turn golden brown. Gently remove the waffles once finished.
