- Preheat the waffle iron according to the manufacturer's instructions, about 5 minutes.
- In a large mixing bowl, combine all-purpose flour, granulated sugar, baking powder, pumpkin pie spice, and salt. Whisk until evenly mixed, about 1 minute.
- In a separate bowl, whisk together non-dairy milk, mild vegetable oil, light molasses, apple cider vinegar, and vanilla extract until smooth and fully combined, taking around 2-3 minutes.
- Pour the wet mixture into the bowl with the dry ingredients. Gently fold together with a spatula, mixing until just combined. A few lumps are okay.
- Lightly grease the preheated waffle iron with a small amount of oil or cooking spray to prevent sticking.
- Pour about one-fourth of the batter onto the center of the heated waffle iron. Spread slightly if needed, being careful not to overfill.
- Close the waffle iron and cook for 3-5 minutes until the waffles turn golden brown. Gently remove the waffles once finished.
- Repeat with the remaining batter. Serve with your favorite toppings, such as maple syrup, berries, or vegan whipped cream.
