- Preheat your oven to 350°F (175°C) and prepare your baking dish by greasing it.
- Melt 4 tablespoons of butter in a medium saucepan and whisk in 4 tablespoons of flour for about 2 minutes.
- Gradually pour in 2 cups of milk while whisking to avoid lumps; cook until thickened.
- Tear brioche into cubes and layer half of it in the greased casserole dish, then pour half of the béchamel sauce over it.
- Add slices of turkey ham and top with grated Gruyère cheese, pour remaining béchamel sauce over.
- Whisk 4 eggs and 1/2 cup of heavy cream together and pour over the casserole.
- Bake for about 40 minutes until golden brown; add a couple of eggs on top during the last 10 minutes if desired.
- Let the casserole rest for about 10 minutes before slicing and serving warm.
