Pumpkin Bread Preparation
  1. In a medium bowl, combine cold, cubed unsalted butter, all-purpose flour, granulated sugar, and cinnamon to create the streusel topping. Mix until crumbly and refrigerate for at least 30 minutes.
  2. In a small bowl, whisk together the dry ingredients: flour, baking powder, baking soda, salt, cinnamon, and nutmeg. Set aside.
  3. In a large bowl, whisk together the wet ingredients: pumpkin puree, granulated sugar, brown sugar, vegetable oil, eggs, and vanilla extract until smooth.
  4. Gradually add half of the dry ingredients to the wet mixture, stirring until incorporated. Add milk and remaining dry ingredients, stirring gently until combined.
  5. Preheat the oven to 325°F (163°C). Grease a loaf pan and pour the batter, smoothing the top. Sprinkle the chilled streusel on top.
