- Preheat your oven to 350°F (175°C) and grease a 9x5-inch loaf pan.
- In a large bowl, whisk together flour, cocoa powder, baking soda, salt, and espresso powder.
- In another bowl, mix olive oil, brown sugar, and granulated sugar until smooth and creamy.
- Add eggs one at a time, mixing well after each addition. Then blend in vanilla extract and sour cream.
- Mash the ripe bananas and fold them into the wet mixture.
- Add the dry ingredients to the wet mixture and fold until just combined.
- Toss chocolate chips with flour and fold into the batter.
- Pour the batter into the prepared pan and optionally arrange banana slices on top.
- Bake for 55-65 minutes or until a toothpick inserted comes out clean. Allow to cool for 20 minutes.
