Step-by-Step Instructions
  1. Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente, about 8-10 minutes. Drain and rinse under cold water.

  3. Once cooled, stir in chili powder and smoked paprika to the charred corn.
  4. In a mixing bowl, combine the cooled pasta, charred corn, mayonnaise, and lime juice. Add cotija cheese, cilantro, and jalapeño.
  5. Gently fold together until well-combined, adjusting with salt and pepper as needed.
