Step-by-Step Instructions
  1. In a medium skillet, heat a splash of olive oil over medium heat. Add spinach and garlic, sauté for about 3-4 minutes until wilted and fragrant. Remove, cool slightly, and chop finely.
  2. In a large mixing bowl, combine ground beef (or turkey), beaten egg, breadcrumbs, Parmesan cheese, Italian seasoning, salt, and pepper. Mix in finely chopped spinach and garlic gently.
  3. Take a tablespoon of the mixture, flatten in your palm, place a mozzarella cube in the center, encase the cheese, and roll into a ball.
  4. To cook, either bake at 400°F (200°C) for 20-25 minutes or pan-sear for 6-8 minutes on each side until golden brown.
  5. Optional: simmer cooked meatballs in marinara sauce for 5-10 minutes for added flavor.
  6. Let the meatballs rest for about 5 minutes before serving, garnished with parsley.
