  • 1/4 cup Artichoke Hearts canned or frozen
  • 1 tablespoon Capers or green olives if unavailable
  • 2 sprigs Fresh Dill Sprigs optional
  • 2 tablespoons Pesto Sauce homemade or store-bought

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and prepare a large piece of parchment paper on a baking tray.
  2. Place the salmon fillet in the center of the parchment paper, and sprinkle sea salt, paprika, ground ginger, and dried dill over it.
  3. Layer kalamata olives, sun-dried tomatoes, artichoke hearts, and capers on top, adding fresh dill and a generous amount of pesto sauce.
  4. Seal the parchment paper to create a packet, and bake in the oven for 20-30 minutes until the salmon reaches an internal temperature of 145°F (63°C).
  5. Let the packet sit for a minute, then cut it open and serve the Mediterranean Salmon with any juices and your favorite sides.
