Preparation Steps
- Preheat the oven to 375°F (190°C).
- Lightly grease a 9x13-inch baking dish with olive oil.
- In a mixing bowl, combine chicken, zucchini, cherry tomatoes, red onion, and garlic. Drizzle with olive oil, oregano, basil, paprika, salt, black pepper, and red pepper flakes. Toss to coat.
- Spread the mixture evenly in the prepared baking dish.
- Sprinkle mozzarella and Parmesan cheese over the top.
- Cover with aluminum foil and bake for 20 minutes.
- Remove the foil and bake for an additional 10-15 minutes until cheese is golden and bubbly.
- Garnish with chopped parsley and serve warm.
