For the Bake
  • 4 pieces Boneless skinless chicken breasts
  • 2 medium Zucchini sliced into half-moons
  • 1 pint Cherry tomatoes halved
  • 1 medium Red onion thinly sliced
  • 3 cloves Garlic minced
For the Seasoning
  • 2 tablespoons Olive oil
  • 1 teaspoon Dried oregano
  • 1 teaspoon Dried basil or fresh
  • 1 teaspoon Smoked paprika
  • 1 teaspoon Salt
  • 1/2 teaspoon Black pepper
  • 1/4 teaspoon Red pepper flakes optional
For the Toppings
  • 1 cup Mozzarella cheese shredded
  • 1/4 cup Parmesan cheese grated
  • 2 tablespoons Fresh parsley chopped

Method
 

Preparation Steps
  1. Preheat the oven to 375°F (190°C).
  2. Lightly grease a 9x13-inch baking dish with olive oil.
  3. In a mixing bowl, combine chicken, zucchini, cherry tomatoes, red onion, and garlic. Drizzle with olive oil, oregano, basil, paprika, salt, black pepper, and red pepper flakes. Toss to coat.
  4. Spread the mixture evenly in the prepared baking dish.
  5. Sprinkle mozzarella and Parmesan cheese over the top.
  6. Cover with aluminum foil and bake for 20 minutes.
  7. Remove the foil and bake for an additional 10-15 minutes until cheese is golden and bubbly.
  8. Garnish with chopped parsley and serve warm.
