Ingredients
  

  • 1 cup all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 tablespoon sugar
  • 1 cup milk
  • 1 large egg
  • 2 tablespoons unsalted butter melted
  • 1/2 cup cooked and crumbled breakfast sausage
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup maple syrup for drizzling

Method
 

  1. Preheat your oven to 375°F and grease a mini muffin tin with cooking spray or butter.
  2. In a large bowl, whisk together the flour, baking powder, salt, and sugar until well combined.
  3. In another bowl, mix the milk, egg, and melted butter until smooth.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
  5. Gently fold in the cooked sausage and shredded cheese until evenly distributed.
  6. Spoon the batter into the prepared mini muffin tin, filling each cup about 2/3 full.
  7. Bake for 12-15 minutes or until the tops are golden brown and a toothpick inserted in the center comes out clean.
  8. Allow the bites to cool for a few minutes in the tin before transferring them to a wire rack.
  9. Drizzle with maple syrup before serving.

Notes
