  • 1/4 teaspoon Crushed Red Pepper adjust to taste
For the Body of the Soup
  • 1 cup Uncooked Medium Shell Pasta or ditalini or orzo
  • 2 cups Fresh Baby Spinach or kale
  • 2 cups Shredded Rotisserie Chicken or cooked chicken breast
  • 8 ounces Cream Cheese at room temperature
  • 1/2 cup Parmesan Cheese grated for quicker melting

Step-by-Step Instructions for Marry Me Chicken Soup
  1. In a large Dutch oven, heat oil from the sun-dried tomato jar over medium heat. Add chopped yellow onion and minced garlic, sautéing for about 3-4 minutes, until translucent and fragrant.
  2. Stir in tomato paste and sun-dried tomatoes, cooking for 2 more minutes until the tomato paste deepens in color.
  3. Pour in chicken broth and heavy whipping cream, adding fresh basil, kosher salt, dried Italian seasoning, garlic powder, and crushed red pepper. Bring to a gentle boil, then simmer for about 12 minutes.
  4. Add uncooked medium shell pasta to the simmering broth, reduce heat to medium-low, and cook for approximately 12 minutes until al dente.
  5. Reduce heat to low, stir in fresh baby spinach, shredded rotisserie chicken, softened cream cheese, and grated Parmesan cheese until melted and heated through.
