  • 2 cups Sweet Potatoes Cubed

Method
 

Cooking Steps
  1. Preheat your oven to 400°F (200°C) and prepare a baking sheet with parchment paper.
  2. In a bowl, toss sweet potato cubes with olive oil, garlic powder, salt, and pepper. Spread on one half of the baking sheet.
  3. In the same bowl, mix chicken breasts with olive oil, maple syrup, apple cider vinegar, thyme, salt, and pepper.
  4. Place the coated chicken breasts on the opposite side of the baking sheet.
  5. Roast in the oven for 25-30 minutes until chicken reaches 165°F (75°C) and is golden brown.
  6. While roasting, melt butter in a skillet, add pecans, and toast until golden, about 3-4 minutes.
  7. Remove from the oven, sprinkle toasted pecans over sweet potatoes, and garnish with fresh parsley. Serve hot.
