Cooking Steps
- Preheat your oven to 400°F (200°C) and prepare a baking sheet with parchment paper.
- In a bowl, toss sweet potato cubes with olive oil, garlic powder, salt, and pepper. Spread on one half of the baking sheet.
- In the same bowl, mix chicken breasts with olive oil, maple syrup, apple cider vinegar, thyme, salt, and pepper.
- Place the coated chicken breasts on the opposite side of the baking sheet.
- Roast in the oven for 25-30 minutes until chicken reaches 165°F (75°C) and is golden brown.
- While roasting, melt butter in a skillet, add pecans, and toast until golden, about 3-4 minutes.
- Remove from the oven, sprinkle toasted pecans over sweet potatoes, and garnish with fresh parsley. Serve hot.
