Preparation Steps
  1. Peel and slice two ripe mangoes into thin strips. Thinly slice half of a red onion, one cucumber, and one red bell pepper. Halve a handful of cherry tomatoes.
  2. In a small mixing bowl, whisk together the juice of one lime, honey, and olive oil. Add salt and pepper to taste and mix until emulsified.
  3. In a large salad bowl, layer the sliced mango, red onion, cucumber, red bell pepper, and halved cherry tomatoes. Sprinkle with cilantro and mint, then gently toss to combine.
  4. Pour the lime dressing over the salad and gently toss again to evenly coat all ingredients.
  5. Chill the salad in the refrigerator for at least 15 minutes.
  6. Before serving, give the salad one final gentle toss and serve chilled.
