  • 2 pieces Lemons 1 sliced, 1 for zest and juice
  • cup Olive oil or another neutral oil
  • cup White wine vinegar or apple cider vinegar for a twist
For the Flavorings
  • 1 small Sweet onion sliced thin
  • 1 tablespoon Creole seasoning adjust for heat
  • 1 teaspoon Salt to enhance flavors
  • 1 teaspoon Minced garlic for aromatic depth
  • 1 teaspoon Granulated sugar to balance acidity
  • ½ teaspoon Mustard seeds for mild heat
  • ½ teaspoon Red pepper flakes optional for spice
  • ½ teaspoon Dried parsley for herbaceous notes
  • 4 leaves Bay leaves for flavor infusion
  • 1 splash Worcestershire sauce for umami depth

Instructions
  1. Prepare the Lemons: Thinly slice one lemon and set aside. Zest the second lemon and squeeze out its juice into a bowl.
  2. Slice the Onion: Thinly slice the sweet onion and set aside for layering.
  3. Whisk the Marinade: In a bowl, combine olive oil, white wine vinegar, lemon zest, lemon juice, Creole seasoning, salt, minced garlic, granulated sugar, mustard seeds, red pepper flakes, and dried parsley.
  4. Layer the Ingredients: In jars, layer the sliced onion, lemon slices, and Gulf shrimp. Add bay leaves.
  5. Add the Marinade: Pour marinade over the layered ingredients until fully submerged.
  6. Seal and Mix: Tighten the lids and gently turn jars to mix without disturbing layers.
  7. Refrigerate and Marinate: Refrigerate jars overnight, turning them occasionally.
